If you just want to know what's "out there", have a look at Keil's product database (of course it only includes products that are officially supported by Keil's tools, but that's already quite a number of chips):

I found one '51 derivative with 3 UARTs. If you're free to pick your uC architecture, there are ARM derivatives with up to 7 UARTs.
