Did 4 UARTs easily: the standard UART in the 8032 "core", and three more "soft" UARTs in the configurable logic.

There'd be plenty of room for many more "soft" UARTs...
(note that's "soft" in the sense of "programmable logic" - not as in software running on the 8032!)
