For Sony, this data sheet is rather complete.

ΦROG, Φ1, Φ2 and ΦRS are the four clock signals you must drive correctly, per the timing noted on page 4. Page 2 tells us that these input clocks use 0V as logic low and 5V as logic high, and that Φ1 and Φ2 have 800 pF input capacitance, meaning you need to drive them with hefty CMOS logic levels or a proper driver. Your 8051 outputs will not do. See the Application Circuit on page 7.

Is Vout an analog signal that needs to digitized with an ADC?


Yes, but it's a lot more complicated ... again, see the circuit on Page 7, which is a basic starting point and a lot of necessary detail is not present.

CCDs are NOT simple devices.
