Have you studied this datasheet yet? It looks as though all the necessary information is there.

From all appearances, unless you have some other way of responding to analog voltage outputs, you will, indeed, need an ADC for each of the three outputs.

You have to feed the CCD a number of prcisely timed clocks and interpret the analog outputs based on the specified timings and the clocks you feed it.

This device is intended, apparently, for use in a medium-resolution scanner or color fax. You'll have to provide a relatively precise positioning mechanism for it, too, and that will also have to be synchronized with the timing signals you feed to the CCD as well.
