It can be highly advantageous to have the load cell and the chip inside a Faraday cage. It should not be a bigger problem to achieve this, as the load cell need no cable connection to outer world. Using a clever mechanics and load cell holder system allowing everthing being mounted inside a Faraday cage can make your application highly immune against hum and EMI. This can result in less need of low pass filtering, providing a higher corner frequency and by this a faster settling time.
