80251 is also a possible upgrade it seems
If you should decide to go to a "16 bit '51" the 251 will be your worst choice. Intel were so intent maintaining '51 compatibility (If you use a 251, why would you want it to execute '51 instructions at '51 speed?) that they lost out on making the best processor they could. My personal favorite is the Philips XA, but the "16 bit '51" offerings from Sie.. eh Infineon (166x) are very attractive as well.
