Stephane,
I am under the impression that what you are making is the equivalent of the encoder generating pulses to a digital pot used as volume control.
If that is the case, have you considered using a good ol' rotary switch with the stop removed. That will generate pulses with no 'vibration in the grey area' due to the detent that will hold it in any position.
