Dimmers, fluorescents, relays and such are all MAJOR sources of EMF. Assuming "Hand" means "handheld" you will not have a ground connection.
1) in faq <--- under hardware questions there is a 'how get rid of noise' entry, apply all you can.
2) make the measurements differential to cancel as much noise as possible.
