I think the wrong question is being asked here. It should be what is our favorite application? Then we should reference something we have built ourselves.

Recently Mr. Steve M. Taylor was impressed with a PIC application used to debounce eight inputs at one time. So much that he reverse engineered it to an 8051 equivalent assembly program.

When I look around the Internet most of the innovated projects are being done with PIC's IC's. They are not any better than the 8051 but the users are applying them solve real world problems.
