Almost invariably, they merely serve to confirm your e-mail address - thus ensuring that you will get loads more spam!
I referred to opt-out from reputable sources (as if any such would spam). E.g. a lot of magazines spam their subscribers from a legal list (no rag sent to you if no e-mail address sent to them). According to my IT guy, a little known fact is that in many cases clicking "cancel" on a pop-up instead of the 'x' in the topright corner can install whatever nefarious stuff the pop-up generator may want to install on your PC.
