What is "best" depends entirely on your specific requirements. As you have given absolutely no indication of your criteria, it is impossible to answer your question!

I presume you mean "easy interfacing" - but, again, what does "easy" mean to you?
The particular processor you're using will make a difference; eg, I2C will be easier on processor with built-in I2C!
An analogue sensor could be easiest if your processor has a built-in Analogue-to-Digital Converter (ADC).
