But how do you know whether a 50-page datasheet is 50 pages of useful, accurate and complete documentation - or is full of errors, omissions, inacuracies, ambiguities, contradictions, etc that only come to light halfway through the project?!

You can't, but, at least, you can determine if it is (un)likely the needed info is available.
