SBUF holds only 0x00, which is then fed through the rest of my code and messes it all up.

Can you check if the Rx line pin is pulled low? This would cause the "reception" of a 0x00 byte, as well as setting the appropriate error flag (should cause a framing error due to the lack of a stop bit, or maybe a "break detected" flag).
