How about scanned lasers ? Have to work out the chances of seeing a bullet at Mach 1 ? though.
Look at the reflection from two orthogonal scanners.

Bullet is 10mm long ? V=330metre/sec
0.01/330 = 30usec to travel 10mm. Scanning say 45 degrees in 20usec= 360 deg in 160usec = quite a lot of rads/sec. How fast can a polygon scanner scan ?
