There are RS-485 driver chips from Linear Tech, LTC1487S8, that can drive 256, RS-485 recievers.
Even if you went to Ethernet you would still need multiple routers to handle that many terminals.

With the RS-485 approach, you could have multple repeaters if you wanted to have more than 256 terminals.
