I have made "dongles" like this in the past. But I needed an industrial PC card (486 based) with 16MB of memory to do the job. You could easily make a 8051 output PostScript code, but writing a PS interpreter for a 8051 is not that easy. You may be able to do it, but I doubt the result would be very good/fast...

You can also buy very cheap laser printers now (from HP, Oki and others) that include PostScript as standard, so why bother?

And PostScript BTW, is anything but obsolete. Software like InDesign, Quark Xpress, Illustrator etc. can't print properly (some versions not at all) on non-postscript printers. If you work with documents with embedded EPS files (very common in DTP) you also need PostScript to print the documents. The above mentioned software doesn't use "printer drivers" at all. They generate their PostScript internally...
