You have 2X8 led's and 1*8 relays. That's a total of 3*8 outputs. You could consider using a latch for all your outputs. That way you'd use a single 8bit port for loading the latches, and 2 pins for addressing the latch and another one for actually latching the data. Use the LCD in 4 bit mode, and you will need another 7 i/o pins (could do with less). The remaining pins can be used by ADC (I think you would have enough pins left for your ADC..)
