You could also try to map the LCD, output latches and ADC in your external memory map. This way you use 2 8-bit ports for ADC, LCD and Output, and you still have 16 pins left for other purposes. Using 4x4 for keyboard, leaves you still with 8 pins available for serial comms and 3 digital inputs...
