Whenever you can, avoid using thermo couple.

E.g. digital sensors like DS18B20 are many times easier to read out and no influence of the cable can occur.

Otherwise the AD595 seems the best solution, since it contain already the ice point compensation.

Furthermore you must only use special thermo couple typ K cable and connectors to feed the sensor voltage to the AD595 as near as you can. Otherwise the cable and all connectors in between can cause big errors.

Furthermore watch, that a thermo couple was non linear !
Maybe in 0...100°C it looks almost linear, but below -50°C it was very nonlinear.

All these cause, that an thermo couple measurement was many times more expensive as digital sensors.

Thus thermo couple should only be used for a wide temperature range.
And for temperatures near 0°K special thermo diodes are used (such a special diode cost about 100..500€).
