You need to tell us the budget you have for this project because every different approach has a different cost to implement, for example:

Off the shelf smart sensors with digital readout and conectivity with a micro or pc would cost $$$$$.

doing the sensors yourself with ADC would be demanding from your hardware skills.

All depends what your supervisor wants you to do. Can't tell you untill you tell us something clear.
