Most graphics LCD controller chips in the market do not support a character mode. So if you select a GLCD with a Toshiba T6393C controller you have selected one of those that does happen to support character mode. The controller used in the Noritake displays is a custom chip specific to their product line happens to support a very nicely implemented graphics and character mode.
Beyond these two I am unaware of other controllers for GLCDs that also support character modes. I would have to check but I believe the OSRAM one and two bit/pixel controllers for their color type displays is also a custom chip for their displays. I have not yet programmed one and so am unaware if it has a character mode. Final comment....using a GLCD and rolling your own character driver on top the graphics is a far superior implementation because you can support several fonts mixed and the glyphs can be painted in any location..included rotated if you desire.
