An interrupt can ONLY interrupt another if it is of higher level Jacob. Read the "Bible". What you are afraid of simply can't happen, there is no need whatsoever to be afraid.
Interrupts are by far the most powerful and versatile tools you have inside something like an 8051. Do NOT shy away from them, or you might better resort to trying to program bricks.
