As described in the Dallas (Maxim) documentation - they generate a reset pulse - thus it is easy to detect which reader has a button touched on it. After getting this reset pulse, your software can read the device.

Also, security wise, it is easy to duplicate a one wire device with a little 8 pin micro. Smart card with crypto is much more secure.
