Because it sounds good.

Because you might not use 24 bits, but need more than 16.

Because you might have some measurements that need 24 bits and you have the time to average over hundreds of samples.

I will like to know the application where 24 bit adc are use?

I can give you one example: Electrocardiography (however, _not_ with a '51, but that's another story.).
