I would suggest, put away all the complicated analog stuff and use a sensor with direct digital number output, e.g. DS18B20.

Simple start a conversion, wait until it was done, read out the number and display it.

The only complicated part may be, to convert the 1/16°C value after the decimal point into dezimal.
