Actually, the 'C' is for "Complex" - otherwise you'd be saying that a RISC instruction set is incomplete!?

Actually, each one has only one instruction set - the numbers you mention are the numbers of instructions in the set!

More importantly, as I've said before, RISC or CISC is a matter of architecture - not just the raw number of instructions.
Otherwise, compared to x86 (CISC) or even ARM (RISC) the 8051 would be "RISC!?"
(and the PIC RRRRRRRRRRISC??)

"RISC is faster"

Again, as I've said before, the nature of the RISC philosophy dictates that there are (relatively) few instructions, and each one is (relatively) simple. Thus a single RISC instruction will, on average, execute faster - but you need more of them!!
