Connect the (parallel - maybe 29-series) FLASH similarly as you would connect a SRAM.
Then you need to find the programming algorithm for it and implement in the '51.
But for this task, most ofthe serial nonvolatile memories are used, I2C or SPI interfaced. Besides conventional 24Cxxx, 25Cxxx and 96Cxxx, check out also RAMTRON's memories (they have also parallel, although they are a little bit tricky to interface with a '51), they have negligible write times.
You can also check out the integrated RAM/FLASH at ZMD, and perhaps also nonvolatile SRAM with integrated battery (although these come out of fashion now - ST and DALLAS produced them, among others).
