If you are in the lucky state, that you can develop from scratch, then there is no problem to use any voltage which you want.

But often you must still support older gadgets, so changes can only be made very slowly.

Thus we have lots of devices, which needs 5V or 12V signals to control it.

Also in industrial environment often 24V levels are needed.
