The parallel port is only 5V, isn't it? Can the chip be wired directly to it without messing anything up?

The datasheet of the device in question will tell you what voltage levels the pins will tolerate.

However, emulating an UART on the parallel port will be tedious (for transmission) to next-to-impossible (for reception, if the ISP protocol requires reception).
