EEPROMs like 28C512 are too slow to write to in a serial ISR unless @ ~300bps
And so what. Doing anything but buffering the data in an ISR is a mistake anyhow.

This is a plain vanilla app, read the data to a buffer in the ISR, let the main transfer it to the NVM
