I would never recommend replacing a fast mcu by two or more, unless the tasks for them are naturally separable. Anything requiring precise synchronisation or heavy communication (notabene in both directions) is a pain to debug and maintain.

It was perhaps the worst design decision of my life to build a multipricessor display...
