Anyone who's read the datasheet knows that you can use the HD44780 or equivalent device open loop.

However, you sacrifice a number of its built-in functions when you do that. You still have to read the datasheet though, since the timings can vary.

Now, if you only use it to display a few messages and never attempt to do anything sophisticated, open loop operation with R/W* grounded can be made to work. It does, after all, save a pin.
