It's in the name a microcontroller PRIMARILY controls stuff, a microprocessor PRIMARILY process stuff.

Regulating the thickness of a sheet produced by a milling machine is a control operation that may as a secondary function display the requested and actual thickness.

A calculator (such as the famous TI or HP series) would be an example of a processor operation (converting a register to hr:mn:sc), if you pull two wires out to trigger a bomb it would still be a processor operation primarily.

Please Note that "control" can, in some instances mean "gather". For example reading a loadcell is a control app, although the results are processed to show weight in known units rather than loadcell voltage. Ahgain, here the PRIMARY function reading the loadcell "must be done in a timely fashion" the secondary function of converting to units can be done "anytime within a few seconds"
